PORK ADOBO

1 kilo pork, sliced into 1 inch cubes
1 garlic head, crushed and minced
1/2 cup soy sauce
1/4 cup vinegar
Juice of 1 lemon
Oregano, tied into a sprig
Cooking oil
2 cups water
2 cups sliced radishes
1 teaspoon peppercorns
Wash pork cubes in clean water. Put in a medium sized casserole with minced garlic
soy sauce, vinegar, lemon juice and oregano. bring to a boil in medium heat until
pork is tender. Remove from the pork from the sauce. In a wide frying pan,
heat cooking oil, then fry pork cubes until slightly brown. Return to casserole
with sauce. Put the sliced radishes and cook until radishes are tender.
Add salt to desired taste.

Serve with sliced tomatoes seasoned with soy sauce.

Variation: One can add 3 tablespoons salted black beans or 1/4 cup peanuts.
